Serves: 4-6

Langostino is the Spanish name for little lobster or squat lobster, they have a tender texture and delicate flavor. Many people like to use langostino tails in place of standard lobster in lobster rolls. I’m sharing my easy recipe for Langostino Mac and Cheese, there’s no need to make a roux since I use Pub Cheese as the base. The Italian Truffle Cheese gives it a wonderful flavor, and the crispy panko crumb topping adds a nice crunch and variation of texture. Ingredients

  • 12 oz Langostino Tails, defrosted
  • 8 oz Macaroni Pasta (half bag)
  • 8 oz Sharp Cheddar Pub Cheese
  • .5 lbs Trader Joe’s Italian Truffle Cheese, shredded (or substitute with Gruyère)
  • ⅓ Cup Half & Half
  • 2 Tablespoons Salted Butter, divided
  • ½ Teaspoon Fine Sea Salt
  • ¼ Teaspoon Ground Black Pepper
  • ⅓ Cup Panko Bread Crumbs
  • 1 Tablespoon Chopped Parsley

Method

  • 1)

    Bring a large pot of water to a rolling boil & cook 8 oz of Macaroni according to the package instructions.

  • 2)

    While you’re boiling the pasta, melt 1 Tablespoon of Butter in a non-stick pan using med-high heat. Add ⅓ Cup Panko Crumbs & stir constantly until golden brown – this should take about 3 minutes. Pour into a bowl & set aside to cool. Once cooled, mix in 1 Tablespoon Chopped Parsley.

    Double check the macaroni for doneness, then drain. Immediately put the macaroni back into the pot. Add ⅓ cup Half & Half, 1 Tablespoon Butter, ½ Teaspoon Fine Sea Salt, ¼ Teaspoon Ground Black Pepper and the full container of Sharp Cheddar Pub Cheese. Use med-low heat & stir until the pub cheese is melted. Add the Italian Truffle Cheese & continue to stir until it’s completely melted. Taste & add more seasoning if needed.

    Drain the Langostino tails well, and use paper towels to dry them off. Excess liquid will cause the cheese to become clumpy. Add the Langostino tails to the macaroni & stir until the Langostino tails are heated through (they are already cooked, so avoid over heating)

  • 5)

    Serve immediately. Add to a serving dish or directly onto plates, top with the crispy Panko crumbs. Enjoy!

    Hi,first I love almost all your recipes, plating presentation photos! it always looks so good and delicious, You are so talented! 2nd I really want to make a lobster Mac and cheese as a side dish for a Friendsgiving event coming up and this recipe looks amazing…Any recommendations on making this ahead and reheating? Is that possible??? I don’t know if I’ll be able to make it at the event. Thanks for any feedback

      Thank you so much Danielle! This dish tastes best right after it’s made, so I don’t recommend making it ahead of time and reheating. To save time, pre-toast the panko crumbs, and add all the other ingredients into a container so you can pretty much add it to cooked macaroni. That way you only really have to cook the macaroni before serving.
