I made the same cake for a friend`s birthday party last summerand used Cream Cheese Frosting. I was worried that the frosting may not hold so well or melt due to the warm weather. But to my surprise, it endured and stayed in shape the whole day even at room temperature.

I made this particular carrot cake you see in the photos above last month to replace the old "ugly" pictures I took when I was just starting to blog. I added some whole pecan nuts at the bottom of the pan before pouring the batter for baking and it made a delicious crust. I also sprinkled the surface of the cream cheese frosting with cinnamon and it was a heavenly combination!

    Hi Bebs,
There is wheat and white flour in your recipe. Can I use all purpose flour instead or self raising flour? And what is the measurement? Is it the same still? Many thanks. I’ve been using your recipe and it always turns out good. Thank you for sharing your recipe. So simple to follow❤️

Hi Alice, you can use all-purpose flour of course. The whole wheat flour is just for added texture to the cake.

    Hi!

I will definitely try doing this soon, as I really like how your egg pie recipe turned out (I believe you make good cakes too!) I just want to ask if I can use butter (salted or unsalted?) instead of oil for this recipe? I just don't like how moist (and thick) banana bread turns out when using oil instead of butter. I am concerned if using oil for carrot cake will lead to same result. Thank you!

Hi Chin, sure if you do not like your cake to be moist then use butter. I think 1 cup of butter should do it for this recipe. ????

FAQs

How to thicken cream cheese frosting for carrot cake? ›

If it's still too thin, take out some of the runny mixture and beat in some more cream cheese. Alternatively, if you whisk it with an electric whisk or in a stand mixer with a whisk attachment on high it will thicken after 3-4 minutes.

Why does carrot cake work? ›

Since carrots are one of the sweetest and most accessible veggies out there, the use of carrots as natural sweeteners only made sense. The practice of using carrots in desserts started in medieval times. Cooks would make a type of “pudding” with boiled carrots, spices, flour and eggs.

How to thicken cream cheese frosting without adding more sugar? ›

If you are trying to avoid any sweetness to your frosting you could try some cream of tartar or some cornstarch mixed with a little milk. You can also whip heavy cream to stiff peaks and fold into the softened cream cheese. People use gelatin to thicken and set whipped cream frostings.

Does butter thicken cream cheese frosting? ›

Unsalted butter – It gives the frosting buttery flavor and a texture that's thick enough for piping.

Why not use butter in carrot cake? ›

Carrot cake is oil-based, rather than butter-based. This keeps it moist and helps it last for days. Unfortunately, it also means you lose the leavening power that creaming butter and sugar would bring. (Creaming, or beating together the two ingredients on high speed, aerates the butter.)

Why does my homemade carrot cake fall in the middle? ›

This is because too much batter in one cake tin may result in the weight of the batter being too much for the cake to support, causing the cake to collapse and sink in the middle as it bakes. This is especially true for cake recipes which have a more softer, delicate structure to them, which many of my cake recipes do.

Why is my carrot cake not moist? ›

A dry cake is usually the result of one of the following pitfalls: using the wrong ingredients, making mistakes while measuring or mixing the batter, or baking the cake too long or at too high a temperature. Once you understand which common cake-baking blunders to avoid, you'll know how to bake a moist cake every time.

How to fix frosting that is too runny? ›

Most frostings are made with powdered sugar (otherwise known as confectioners' sugar or icing sugar), which contains cornstarch to prevent it from caking. Adding more powdered sugar can be an effective way and the easiest way of absorbing too much liquid to achieve thicker frosting.

How to thicken store-bought frosting? ›

Thicken it with powdered sugar: Need frosting that can be piped onto a cake? Thicken store-bought frosting by mixing in powdered sugar, 1 tablespoon at a time, until the desired consistency is reached. Whip it until fluffy: To make frosting fluffy, it needs to be aerated.
