You can improve this recipe instantly just by using a fresh vanilla pod. The flavour is so much better than when using a vanilla extract. For a change, rather than adding to the ingredients I actually took some out.

Simplicity Works

As you can see there is an array of flavours in this recipe. This will give you a rich complex taste to the final product. However sometimes, keeping things simple can work just as well. Cinnamon, Ginger, Nutmeg and Cloves are all associated with the classic Christmas pudding, but you really don’t need to use them all every time you make these Vegan Christmas Sweet Snacks.

The Perfect Christmas Treat

Cinnamon and Ginger make a great combination. You can use them with candied orange peel rather than cranberries for a great Christmas treat. Adjust the amounts for personal taste, just stick to a similar total spices amount so you don’t affect the texture too much. You can use Cloves and Nutmeg instead if you prefer. Then maybe swap the Maple Syrup for honey to give yourself another option.

Endless Possibilities

The possibilities really are endless here. Using Cashew Nut Milk instead of Coconut Milk changes the taste profile completely, and will give you even more options.

Personal Favourites

Ginger Cake is one of my all time favourites and this is a great recipe. You don’t want to take away from the predominant taste of ginger, but there are still ways to vary the recipe.

The Joys of Sesame

You can simply alter this recipe very easily by just swapping the sunflower oil for sesame oil. If like me you really love sesame seeds, toasting a few and adding them to the mix before cooking will add even more of that delicious flavour.

Sugar and Spice

You can use a finely ground Demerara sugar instead of using the castor sugar. It will give a unique flavour and texture that is delightful. Using fresh ginger will also add significantly to the flavour, simply peel and use a nutmeg grater to avoid pieces that are too big.

Something Special

You couldn’t call these anything but “Bliss Balls”. They really are a wonderful treat. I could mention a number of after dinner treats that aren’t nearly as nice as these. Chocolate and orange are 2 flavours well known to enhance each other. Adding the coconut flavour as well does something quite special.

My Favourite Version

I am sure you can guess what my go to ingredient is when I want to try and improve something that is already so nice. Sesame seeds are my all time favourite. You can create something totally different but equally as delicious by replacing the coconut products with sesame products. Sesame oil and Tahini with some freshly toasted sesame seeds to coat the whole ball added at the end will give you a luxurious texture and flavour like no other.

Often Overlooked

You can’t beat a good brownie, and these are great. There are, as always, many ways to change the recipe. You could try using caraway seeds for a real change. Often overlooked, caraway seeds have a nutty aniseed flavour.

You can grind the seeds and add them to the recipe mix, toast them and add them whole to the mix, or even try doing both. You might prefer to replace both the cinnamon and mixed spice to give 1 more dominant flavour, personally I like the combination of Caraway and mixed spice best.

Choose Your Own Favourites

You could also make your own version of the mincemeat. You can make it really simple. Just put a selection of raisins, sultanas, orange peel, dates or figs in a blender and chop them until they form a pulp/paste. Adding a few Cashew or Pistachio nuts to this mix gives you an extra layer of flavours too. Any combination of these can work. Choose the ingredients you like best.

Take Your Time

Toffee, Brittle or even Fudge can be great fun to make. If you have kids you can easily turn it into a maths or science lesson too. The slightest changes in temperature can make a huge difference to the texture. Take your time and don’t get flustered. It really isn’t that hard.

Choosing Your Toppings

Personally I use brown sugar not white. I prefer the lack of processing. You can use almond or oat milk instead of Soya milk or even add a little honey. The choice of nuts and seeds you can use for the topping is endless. You could try roasted pumpkin seeds instead of nuts for a change sometimes. Crushed walnuts are hard to beat at Christmas, and my favourite combination is crushed walnuts and Brazil nuts.

If I am totally honest, this is a recipe that I have made few changes to. You may have made a Strudel before, but I had not, so I followed the recipe very carefully (not my normal way of doing things). Pecan Pie is another recipe I had never tried. I did change things by using different pastry crusts. A nice short crust pastry will give you a very different pie than if you use a luxuriant flaky pastry. You could even make some small, light Filo pastry parcels.

Exciting Flavours For Everyone

You could try using sesame or ground nut oil instead of coconut oil to create different flavours. Maybe you could use figs or even sultanas instead of dates too.

Choose Flowers To Give Extra Glamour

Instead of dried cornflowers you could choose some of the other amazing edible flowers. You might be surprised at how many different flowers are eaten around the world. Some have amazing healing properties too.

· Nasturtiums have a peppery, spicy flavour.

· Roses offer a sweet flavor with a slight spice. The intensity of flavor will depend on type, colour, and soil conditions. The darker the petals, the more pronounced the flavor. All roses are edible, but before consuming, remove the bitter white portion of the petals.

· Calendula (Pot Marigolds) is my favourite and is often called “the poor man’s saffron”. You get a flavour that can range from spicy to bitter and tangy, sometimes even peppery. The flower is also a skin-healing powerhouse promoting cell replacement on damaged skin. Calendula’s colour can vary greatly from pale yellow to bright oranges and the petals add a yellow tint to food and a saffron-like flavor, hence its nickname.

· Lavender flowers are well known for their soothing, calming and relaxing effect. They have a distinctive floral taste, but use them sparingly as the flavour can be intense. A little goes a long way
